I am so glad there's no nutritional label on this recipe--cause I don't wanna know. But this is Delicious!
8 oz. Bow Tie Pasta
2 T Butter
1/2 lb. Chicken Breast, cubed
2 green onions, chopped
1 T Butter
1 can artichoke hearts (optional)
1 t dried thyme (or 1 T fresh)
1/2 T garlic powder
2 C Heavy Cream
3/4 fresh grated Parmesan cheese
1/2 t Salt
1/2 t Pepper
1/4 C Pine Nuts (optional)
Cook pasta according to package. Drain and set aside. In a large skillet, heat 2 T butter over medium heat. Add chicken and stir fry until cooked through. In separate pan, saute onions in 1 T butter until tender. Add artichoke hearts, onions, and thyme to chicken. Add garlic powder, cream, cheese, salt and pepper. Simmer about 30 minutes, stirring occasionally. Mix with bow tie pasta Top with pine nuts. Makes 4 servings.
(I think mushrooms and or fresh spinach might be good in this recipe as well--let me know if you try it that way)
