Cafe Rio Pork Barbacoa

A close second to the real thing

3 LB. Pork Roast
1 Med. Can enchilada sauce (red)
1 Sm. can diced green chiles
1 can Coke (not diet)
1 C Brown Sugar
2 Cloves garlic, minced

Slow cook pork on low for about 5-6 hours (cover with water and season with salt and pepper). Drain liquid. Add above ingredients, cook 2 more hours. Shred pork and serve in a tortilla* with cilantro lime rice, black beans, guacamole, cilantro, lime, and romaine lettuce. Top with cilantro lime ranch dressing. Serves about 8.

*Costco sales great uncooked tortillas in their fridge section.
